A vegetarian (not vegan) dish that can be served as a side dish for omnivores and a main dish for people who prefer not to eat meat. Fresh mushrooms will give you a more richly flavored rice, but if canned is all you have at the moment (like I did when I cooked this dish), worry not because you'll get good results too.

Ingredients
1cupvery hot newly-cooked rice
1tablespoonbutterat room temperature
sliced mushrooms(I used canned), drained well
ΒΌcupgrated cheeseplus more to garnish
1tablespoonsnipped parsley
saltto taste
pepperto taste
snipped parsleyto garnish
Instructions
In a bowl, stir together the rice and butter until the butter is melted and every grain of rice is glistening.
Add the mushrooms and stir.
Add the cheese and stir until melted.
Sprinkle in some salt and pepper.
Add the parsley and stir.
Top with more grated cheese and snipped parsley before serving.
